Fresh baked salmon filet with vegetables

The recipe for my blog is a baked salmon with vegetables and salad dish, which is very similar to the fish dishes my grandmother made in Brazil.  Beef and chicken are very popular for most dishes in Brazil, but my grandmother loved to bake fish with vegetables because she loved the taste and thought it was better for the family’s diet.  This was a dish we usually ate during the week for our family dinner or sometimes on the weekends when we were all together.  My grandmother also loved to baked fish with lots of vegetables because she said all of the juices from the vegetables soak into the fish and make it more delicious.  This dish goes great with almost any bottle of dry red wine.

Ingredients
2 lb salmon filet
½ cup of fresh chopped garlic
2 teaspoons of coconut oil
1 teaspoon of salt
2 chopped white onions
½  cup of broccoli
½ cup of cherry tomatoes
¼ cup of green olives
½ cup of carrots
2 teaspoons of fresh oregano
4 stalks of asparagus
2 fresh squeezed lemon juice

Instructions
1. Defrost salmon filet
2. Place defrosted salmon filet in pan which can be used in oven
3. Chop garlic and apply to salmon filet
4. Apply coconut oil and salt to salmon filet
5. Add all listed ingredients from list
6. Squeeze two fresh lemons and add lemon juice to baking dish
7. Preheat oven to 400F
8. Cook for 25 minutes at 400F for the salmon to be well done

Mangu de Platano Maduro (Mashed Yellow Plantains)

This plate is not something fancy but its something i love to eat. Since i was young my grandmother always made me this for breakfast. Its very common in the Dominican Republic. Some people use green platains, i rather use yellow since its sweeter. You can eat Platano Maduro (Yellow Platains) with different things. For example, Salami, Ham, Etc. I chose cheese and boiled eggs.

Ingredients: Yellow Platain Salt Hot Water Butter

Optional ingredients :

Eggs Cheddar Cheese

- Instuctions :

Boil hot water for a minute. If your going to boil eggs its best to put the egg in the water first, since it takes longer. Add salt to the water. While the water is boiling, Peel the yellow platain and cut it into pieces then put it in the pot with hot water. Wait about 10 to 15 minutes then check if the platains are cooked enough, if they are take them out. I prefer them mashed, Start mashing them and adding butter to it. After its mashed evenly you may add anything you want to the side. I used boiled egg and cheddar cheese. Its a simple and delicious dish especially when you want something fast. Try it !

New Orleans Style Shrimp Po Boy

Below I will give detail on how to make the traditional and popular Po Boy sandwich, originated in southern Louisiana. My background and family are all from Louisiana and we grew up eating these sandwiches on a weekly basis. My personal favorite is the shrimp po boy. Other pastime favorite (I no longer eat this for vegetarian reasons lol) was the roast beef and hot sausage sandwich. Family and culture tradition since the late 1800s.

Ingredients
French Bread (baguette)
½ or 1lb of raw shrimp (cleaned and peeled)
Louisiana Shrimp Fry
Vegetable or Olive oil
Mayo
Iceberg Lettuce
Tomato (optional)
Pepper (optional)

Cooking Instructions
Soak and defrost frozen shrimp
Next peel shrimp when defrosted if not already peeled, butterfly the shrimp if desired
Prepare Louisiana Shrimp fry batter in a medium bowl with a top to cover (for shaking purposes)
Preheat oil in medium or large frying pan (add enough oil to cover bottom of pan and add a little more)
Add peeled shrimp to batter, cover and shake until all shrimp is fully covered in the batter
Next, add battered shrimp to hot oil, let fry for 3-4 minutes on each side
Cut French bread into 6 inches, dress French bread with mayo, lettuce and/or tomato, pepper
When shrimp are cooked, add to a plate covered with paper napkin, let cool
Last, add warm hot shrimp to dressed sandwich!

Mother's Day French Toast

I chose this recipe because Mother's day just passed, and I make this every year for my mother because it is her favorite breakfast. It is very simple to make, and also very quick, but tastes delicious and can be decorated in a variety of beautiful ways for any occasion. I love to cook, but because the holiday passed so recently, I thought it would be appropriate to post this recipe. Enjoy!
Ingredients:
4 Eggs
2/3 Cups of Milk
2 tsp. Cinnamon
8 Slices of bread (preferably thick and not so fresh)
Butter
 Syrup (your preferred choice)
Preparation:
1. Beat eggs, milk, and cinnamon together in a shallow bowl.
2.  Dip each slice of bread into the egg mixture, allowing bread to soak up some of the mixture on each side. Melt some butter over a large skillet on medium high heat. Add as many slices of bread onto the skillet as will fit at a time. Fry until brown on both sides, flip as necessary.


3. Serve hot with butter, syrup of your choice, and if available, fresh berries.

 Green Plantain Spiders with Spinach Salad

I choose this recipe because it contains green plantain and green plantains are originally from my country, and I love them. The first time I saw this recipe was in Utilisima which is a channel with different shows including culinary shows. Later, I tried to make at home because I love to cook, but I added some more ingredients so that it could taste even better. Also, every time I cooked this green plantains spiders I made something to eat it with like different kind of dips or tuna salad. This time I came up with the idea of a spinach salad to add a little bit of freshness to this dish since summer is almost here. What I actually like about this recipe is its simplicity because you have all the ingredients at home meaning that you do not need to go to the supermarket and spend your money.  This recipe can be served as an appetizer or snack, and it is extremely delicious.

Ingredients: Green plantain Spiders
  • 1 Green Plantain.
  • A hint of salt and pepper.
  • 1 Garlic Clove, minced.
  • 1/2 cup of vegetable oil.
For the spinach salad

  • 1 cup of chop fresh spinach.
  • 1/2 cup of grated carrots.
  • A hint of salt.
  • 1 1/2 ts. of vinegar.
  • 3 ts. Olive Oil.
Instruction:
  1. Peel the green plantain.
  2.  In a grater, grate the plantain.
  3. Mix the grater plantain, salt, pepper, and garlic.
  4. Make balls and then squeeze them until they look flat.
  5. fried the spider in a hot pan with the vegetable oil until they look golden and crispy.
  6. In a different bolw, mix the spinach with the carrots, vinegar, salt and olive oil.
  7. Plate it in a white clean dish so that the color of the salad and the golden of the spiders look irresistible.
  8. ENJOY IT!!












"Macaronis and ground meat"


Macaronis and ground meat



Macaronis and ground meat is a delicious dish. It’s easy to make. My mother usually cooks pasta mixed with others ingredients. This is one of my favorite dishes.  If you love pasta you will love this dish!



Ingredients:



Ground meat

Macaroni

Pepper

Onion

Tomato sauce

Salt

Seasoning

Oil

Garlic

Pasta sieve



Step 1: put 3 cups of water to boil in a pan with a little bit of salt.

-         Once the water is boiling, add the macaronis

Step 2: cut the pepper, garlic and onion in small pieces

Step 3: while the macaronis get soft, put the meat on another pan with oil. While is getting color, add the seasoning, pepper, onion, and garlic.

Step 4: once the macaronis get soft, put them into the sieve and then mix them with the ground meat.

Step 5: add the tomato sauce and mix.

Step 6: smells good? Yes? Then, you are doing ok!



Serve as desired. With cheese or any extra ingredient you can’t live without.

Seco de Pollo

 Seco de Pollo is a traditional peruvian dish.  This is one of my favorite dishes from my country. I chose it because everytime i go visit there, as a welcome they make me that. Also my mother always makes this dish and it taste delicious. I recommend everyone to try it and there will be no regrets. It is also available in Peruvian restaurants here in Newyork like Pio Pio and La casa del pollo peruano.


Ingredients:

-1 onion
-Ajo Molido
-Goya Seasoning
-Chicha de Jora
-Kitchen Wine
-Culantro or Bonnie plants
-5 or 6 pieces of Chicken
-a quarter of Rice
-A cup of water
-Aji amarillo
-3 pieces of potato
-small pieces of peas
First have the rice prepared

Cut the onion into small pieces

Fry the small pieces of onion on a medium size pot and add a spoon of Ajo molido

While mixing the onion and the ajo molido add a bit of Goya seasoning and keep mixing

Then use a blender and blend a small amount of culantro, a cup of chicha modara, a cup of kitchen wine and aji amarillo.

After it is blend it will come out in a green color and u add that liquid to the frying pot.

Then the liquid you mix it with the onions and other ingredients in the frying pot.

While that's mixing, you start cutting the pieces of chicken and then add them to the pot with the seasoning.

Also add the 3 pieces of potato and the green peas to the pot.

Then the chicken starts mixing with seasoning and the potato and you let it stay there until it gets done.

If you don't see as much liquid you add a glass of water to the pot.

After 10-15 minutes the chicken will be cooked and you serve it with some nice rice to a side. :)

Potato Chops


Potato chops are delicious supper meal for most of the families in Bangladesh. It is easy to prepare and fry. During Ramadan potato chops are one of the common item we eat during Iftar. Some buys those from restaurant some prepare at their home. I used to help my mom while she prepared those item for Iftar. And that is how I learned to prepare and fry potato chops.

Ingredients:
  • Medium sized potato
  • Onions finely chopped
  • 2 cups pea-flour
  • 3-4 green chilies finely chopped
  • Salt to taste
  •  Oil 
1.       First slice potatoes in half and boil in water.
2.       Then  peel the skin smash boiled potatoes .
3.       Add and mix finely chopped onions and green chilies with the smashed potatoes.
4.       Mix 2 cups of pea-flour with water to make a thick paste.
5.       Warm oil in a pan.
6.       Use hand to make oval shape of potato mixture.
7.       Then coat them with flour paste and release into the oil pan to fry.
8.       Fry them until they get golden red color.
9.       Serve hot with ketchup.

Parmasian Chicken with Pesto Linguine




This recipe was shown to me by cousin while I was in FL. Since I love the taste she showed me how to make it. This meal really brings me back to the times where I would stay in FL over the summer. I hope u can enjoy the meal as much as I did.

Pesto Linguine
a pack of linguine
2 cups of Basil leaves
3 garlic cloves
1/3 cup of cream cheese
3 tablespoons of parmasian cheese
3 tablespoons of olive oil (additional for pasta)
1 teaspoon of pepper
salt to taste (additional for the pasta)

Parmasian Chicken 
4 prepared chicken breasts (can be marinated or just salted)
2 eggs
1/3 cup of milk
2 cups of Panko breading
1/3 of parmasian
vegetable oil for frying
pepper to taste

In large pot bring water to a boil. Add salt and olive oil for taste. Add pasta for about 15 minutes or until al dente (reserve the water after boiling the pasta). 



In a blender add basil, garlic, cream cheese, parmasian, olive oil, pepper, and the water reserved from the boiling pasta. Blend until shredded and then add salt to taste.

Strain the pasta and then mix with the sauce. Add more parmasian to desired taste.

Heat a skillet with the vegetable oil on high.

In a bowl whisk the eggs, milk, and pepper. On a different plated mix the panko and parmasian. Take the chicken breast, dip it in the egg mixture, and then into the bread mixture. Place into the hot pan and   repeat with the rest of the chicken breasts. Lower down to medium heat. Flip the chicken after 5 minutes and allow it to cook on the other side.

Ceviche
I decided to prepare this dish because it is one of my favorite dishes. Especially since I love seafood and shrimp is my favorite. It is a very traditional plate in South America. It is very easy and quick to prepare.  It can be served with rice or alone. I hope who ever decides to try this enjoys it as much as I do.

Ingredients:
1.     2 lbs of Shrimp
2.     2 large Onions
3.     6 Lemons
4.     1 bunch of Cilantro
5.     2 lbs Tomatoes
6.     Salt to taste
7.     Pepper to taste
8.     ¼ cup of Oil
Directions:
1.     First wash and clean the shrimps. After washing the shrimp place it in a pot with water and let it boil until the shrimps are cooked.
2.     Cut the onions in slices and wash them after.
3.     Cut the tomatoes into small slices.
4.     wash the bunch of cilantro and chop it after washing.
5.     Squeeze all 6 lemons (can use more if desired).
6.     Grab a big pot or container and place the shrimps after they have been cooked.
7.     Than mix the shrimps, onions, cilantro, tomatoes all together.
8.     Than mix in the oil and lemon juice after add salt and pepper to taste

Shrimp Curry

Shrimp curry is an Indian recipe. This is one of my favorite dish. This is an Indian style cooking. I like this food because it is milky & spicy. Shrimp is my favorite fish & I like the Indian spicy foods that's why I preferred to cook it. It will take around 25 minutes to be cooked. The taste of the dish is delicious. I really don't know where is the recipe came from but I saw my mom to cook it at home.


Ingredients:


  • shrimp--------------1 lb
  • chopped onion------1 cup
  • chopped chili--------5 pieces
  • ginger past-----------1 ts
  • onion past------------1ts
  • garlic past------------1ts
  • turmeric powder---1/4 ts
  • salt-------------------1 ts
  • oil--------------- ---2 ts
  • coconut milk-------1/2 cup




Instructions:


Heat the oil in a medium size fry pan. 


Add the onion, ginger, garlic paste and turmeric powder until they begin to soften, about 10 minutes.


Then after 10 minutes add the shrimp & cook.


Mix the coconut milk when shrimp is cooking.


Stir the shrimp & coconut milk  until shrimp is cooked through.


Season with salt and chili.


Serve the chicken curry.
